How the Zir Works
The Zir’s magic lies in the porosity of terracotta. Water seeps very slowly through the walls of the jar, evaporating on the outer surface. This evaporation draws heat away from the water inside, keeping it naturally cool — even in the height of a Tunisian summer. No electricity. No chemicals. Just physics and clay.
This is why the Zir was — and still is — considered superior to stored water in sealed containers. The slight mineral quality of the clay also adds a subtle, clean taste that many describe as distinctly refreshing.
A Symbol of Hospitality
In traditional Tunisian homes, the Zir was placed near the entrance. Offering a guest a cup of water drawn from the Zir was among the most fundamental acts of hospitality. It represented generosity, care, and the blessing of cool water in a hot land.
